2 pounds of potatoes (Yukon Gold or Russet), cut into wedges
3 tablespoons beef body fat
2 cloves garlic, minced
1 teaspoon rosemary, chopped
1 teaspoon thyme, chopped
Salt and pepper to taste

Instructions:
