Recipe: Roasted Bone Marrow with Parsley Salad
Ingredients:
2 pounds beef marrow bones, cut lengthwise
Sea salt and freshly ground black pepper
1 tablespoon olive oil
1 small shallot, finely chopped
1 cup fresh parsley, chopped
1 tablespoon capers, rinsed and chopped
1 teaspoon lemon zest
1 tablespoon lemon juice
Crusty bread, for serving
Instructions:
Preheat Oven:
Preheat your oven to 450°F (230°C).

Prepare Bones:
Place the beef marrow bones on a baking sheet lined with foil or parchment paper. Season with sea salt and freshly ground black pepper.

Roast Bones:
Roast in the preheated oven for 15-20 minutes, until the marrow is soft and bubbly but not completely melted.
