Recipe: Braised Beef Tail Stew
Ingredients:
2 pounds beef tail, cut into sections
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
1 cup red wine
4 cups beef broth
1 can (14.5 ounces) diced tomatoes
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
Instructions:
Prepare the Beef Tail:
Season the beef tail sections with salt and pepper.
Sear the Beef Tail:
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef tail sections and sear on all sides until browned. Remove the beef tail and set aside.
Sauté the Vegetables:
In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
Deglaze with Wine:
Pour in the red wine and stir, scraping up any browned bits from the bottom of the pot. Let the wine simmer for a few minutes until slightly reduced.
Add Remaining Ingredients:
Add the beef broth, diced tomatoes, bay leaves, thyme, and the seared beef tail back into the pot. Bring to a boil, then reduce the heat to low and cover.
Simmer:
Let the stew simmer for 3-4 hours, or until the beef tail is tender and the meat easily pulls away from the bone.
Serve:
Remove the bay leaves and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh parsley if desired, alongside crusty bread or over mashed potatoes.
