Recipe: Slow-Roasted New Zealand Lamb Shoulder
Ingredients:
1 New Zealand frozen lamb shoulder, thawed
4 cloves garlic, minced
2 tablespoons olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon dried rosemary
1 tablespoon dried thyme
1 lemon, sliced
1 onion, sliced
1 cup beef or vegetable broth
Fresh herbs for garnish (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 325°F (160°C).
Prepare the Lamb Shoulder:
Pat the thawed New Zealand lamb shoulder dry with paper towels. Make small incisions all over the lamb shoulder with a sharp knife and insert the minced garlic into the incisions.
Season the Lamb Shoulder:
In a small bowl, combine the olive oil, kosher salt, black pepper, dried rosemary, and dried thyme. Rub the seasoning mixture all over the lamb shoulder, ensuring it’s evenly coated.
Arrange in Roasting Pan:
Place the sliced lemon and onion in the bottom of a roasting pan. Place the seasoned lamb shoulder on top of the lemon and onion slices.

Pour the beef or vegetable broth into the bottom of the roasting pan, around the lamb shoulder.
Roast:
Cover the roasting pan with aluminum foil and roast the lamb shoulder in the preheated oven for approximately 3-4 hours, or until the meat is tender and falls off the bone.
Rest and Serve:
Remove the lamb shoulder from the oven and let it rest, covered with foil, for 15-20 minutes before slicing. Garnish with fresh herbs if desired, then slice and serve.
