Recipe: Braised Mutton Shoulder with Vegetables
Ingredients:
1 mutton shoulder (about 4-5 pounds)
4 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)
2 teaspoons fresh thyme, chopped (or 1 teaspoon dried thyme)
1 large onion, chopped
3 carrots, chopped
3 celery stalks, chopped
2 cups beef or lamb broth
1 cup red wine (optional)
2 bay leaves
Instructions:
Preheat the Oven:
Preheat your oven to 325°F (160°C).
Prepare the Mutton Shoulder:
Pat the mutton shoulder dry with paper towels. In a small bowl, mix together the minced garlic, olive oil, kosher salt, black pepper, rosemary, and thyme to create a marinade.
Season the Mutton Shoulder:
Rub the marinade all over the mutton shoulder, ensuring it is evenly coated. Let it sit for at least 30 minutes to absorb the flavors.
Sear the Mutton Shoulder:
Heat a large oven-safe pot or Dutch oven over medium-high heat. Add a little olive oil and sear the mutton shoulder on all sides until browned, about 5-7 minutes per side. Remove the mutton shoulder and set aside.
Sauté the Vegetables:
In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
Deglaze the Pot:
Pour in the red wine (if using) to deglaze the pot, scraping up any browned bits from the bottom. Let the wine simmer for 2-3 minutes.
Add Broth and Herbs:
Add the beef or lamb broth and bay leaves to the pot. Return the mutton shoulder to the pot, nestling it among the vegetables.
Braise the Mutton:
Cover the pot with a lid and transfer it to the preheated oven. Braise the mutton shoulder for approximately 3-4 hours, or until the meat is tender and falls off the bone.
Rest and Serve:
Remove the pot from the oven and let the mutton shoulder rest, covered, for 15-20 minutes before serving.
Enjoy the deep, rich flavors of this braised mutton shoulder with vegetables, perfect for a comforting family meal or a special occasion. Its tenderness and robust taste will make it a memorable dish for any gathering.
