Recipe: Slow-Roasted Australian Lamb Shoulder with Rosemary and Garlic
Ingredients:
1 Australian lamb shoulder (about 4-5 pounds)
4 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)
2 teaspoons fresh thyme, chopped (or 1 teaspoon dried thyme)
1 onion, sliced
2 cups vegetable or lamb broth
1 lemon, sliced
Instructions:
Preheat the Oven:
Preheat your oven to 325°F (160°C).
Prepare the Lamb Shoulder:
Pat the lamb shoulder dry with paper towels. In a small bowl, mix together the minced garlic, olive oil, kosher salt, black pepper, chopped rosemary, and thyme to create a marinade.
Season the Lamb Shoulder:
Rub the marinade all over the lamb shoulder, ensuring it’s evenly coated. Let it sit for at least 30 minutes to absorb the flavors.
Arrange in Roasting Pan:
