Recipe: Slow-Cooked Boneless Lamb Shoulder with Garlic and Herbs
Ingredients:
1 boneless Australian lamb shoulder (about 4-5 pounds)
4 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)
2 teaspoons fresh thyme, chopped (or 1 teaspoon dried thyme)
1 large onion, sliced
2 cups vegetable or lamb broth
1 lemon, sliced
Instructions:
Preheat the Oven:
Preheat your oven to 325°F (160°C).
Prepare the Lamb Shoulder:
Pat the boneless lamb shoulder dry with paper towels. In a small bowl, mix together the minced garlic, olive oil, kosher salt, black pepper, rosemary, and thyme to create a marinade.
Season the Lamb Shoulder:
Rub the marinade all over the lamb shoulder, ensuring it is evenly coated. Let it sit for at least 30 minutes to absorb the flavors.
Arrange in Roasting Pan:
Place the sliced onion and lemon in the bottom of a roasting pan. Place the seasoned lamb shoulder on top of the onion and lemon slices.
Add Broth:
Pour the vegetable or lamb broth into the bottom of the roasting pan.
Roast the Lamb:
Cover the roasting pan with aluminum foil and roast the lamb shoulder in the preheated oven for approximately 3-4 hours, or until the meat is tender and easily pulls apart with a fork. Baste occasionally with the pan juices to keep the meat moist.
Rest and Serve:
Remove the lamb shoulder from the oven and let it rest, covered with foil, for 15-20 minutes before slicing. This allows the juices to redistribute, ensuring a moist and flavorful roast.
Serve:
Carve the lamb shoulder into slices and serve with the roasted onions and lemons, alongside your favorite sides such as roasted vegetables or mashed potatoes.
Enjoy the rich, savory flavors of this slow-cooked boneless Australian lamb shoulder, a perfect dish for family gatherings or special occasions. Its tenderness and depth of flavor will impress your guests and make any meal memorable.
